It's been years since I made a cheesecake. I can't find my old recipe. So I'm making a Cheesecake Factory knockoff cheesecake. Or so the recipe claims. It has to ripen for 2 days before eating it. I think this is some kind of dessert torture. I gathered ingredients: and made a Nilla Wafer/almond crust: The recipe said to cook at 350 for 1 hour and 15 minutes then let it sit for another hour with the oven off. It has 23 minutes to go and I hope to god it's done and I am not going to give my relatives food poisoning. The comments and reviews also said to put a pan of water in the oven while baking to keep it from cracking or turning brow. Seems to have worked.
